Directions
Pasta al forno is probably one of the most caloric dishes from the Sicilian cuisine. There are many variations of this dish with more or fewer ingredients but we decided to go far a basic recipe! We are aware also that the ring-shaped pasta (Anelletti!) is not easy to find in the US. In this case, our friend Amazon can help us!
This is the recipe for a basic baked pasta, but in Sicily there are lot of variants of this tasty dish! You could find it with ham, salame, boiled egg, fried eggplants… So, try add these ingredients at your taste, your limit is your fantasy!

Cut the onions in little pieces and put it in a pan with oil, let cook slowly on the burner for a couple of minutes. Put the minced meat and wait 10 minutes, pour the wine and let it evaporate. Now add the tomato paste and, after 30 minutes, the peas; let cook very slow and low for 20 minutes, add salt and pepper end your condiment is ready! |

While the condiment is cooking, put a pot with water on a burner and prepare a baking tray with oil, breadcrumbs and cheese. When water boils, put in a little spoon of salt and the pasta, let cook for 5 minutes; on the anelletti packaging you may read a cooking time of 10 minutes, ignore it! If you let your little rings boiling for 10 minutes, you can’t bake them, because they will be overcooked! |

Strain your pasta and amalgamate it with the condiment you prepared before. Melt and add mozzarella in pieces, pepper and cheese. Set the pasta into the baking tray and level it, then you can pour oil, cheese and breadcrumbs. Bake it for half an hour at 350 degrees F. and wait some minutes before serve it, but don’t let cool down pasta! |
