Directions
A delicious dish for everyone who loves cod! This pasta sauce can be used with either long or short pasta, the choice is yours! To speed up the preparation of pasta with cod sauce, ask your fishmonger to provide you with the soaked and salted cod. Be very careful with the salt as ingredients such as cod and olives already have quite a bit of salt. This dish is prepared with very few, easy-to-find, effortless ingredients, with cod as the main ingredient and fleshy black olives that add a touch of colour, the classic half glass of white wine and a sprig of parsley.

Rinse the cod and after having put a pot of water on the fire and brought to boil, immerse the fish and cook for 10 minutes. |

Drain the fish, let it cool and remove the skin and bones. Now break it up into irregular pieces. |

Chop the spring onions and leave them to wilt in a large pan with plenty of olive oil. When the onions have softened, add the pieces of cod, leave to gain flavour for a minute and then add the wine. |

Now you can add the tomato passata and the roughly chopped olives and season with salt and pepper and let it cook for about 15 minutes until the sauce has reduced, then turn off the heat. |

At this point, cook your favourite type of pasta in lightly salted water, strictly al dente, and finish cooking it together with the sauce. Sauté the pasta, add the chopped fresh parsley and stir until cooked through. |
