Rosticceria, or Tavola Calda, is probably the first real “Fast Food” in Sicily – forget about Mc Donalds or Burger King, if you want to taste something truly sicilian, but you don’t want to sit on a table and have something very quickly, then a “Rosticceria” is the way to go. Each single “Pezzo di Rosticceria” has usually the price of 1 Euro, and with 2 is already a full meal: it’s extremely cheap!

Calzone, Pizzetta, Rollo’, Ravazzata con Carne, Calzone fritto, Spiedino or Crostino are just some of the incredible variety that you can find in Sicily. So make sure to be as much creative as you can when cooking this, don’t put any limit on your creativity!!

Steps

1
Done

Sift the flour and put it in a bowl together with the sugar, the lard and dried yeast. Start mixing until all the lard is completely dissolved into the flour!

2
Done

Pour the water slowly and add salt – Start mixing and keep adding the water until is gone.

3
Done

Turn the dough onto a surface and knead for 10 minutes or until smooth and elastic. The mixture needs to be sticky, fluffy and homogeneous.

4
Done

Start creating small balls of approximatively 100gr each (50 if you want to do small pizzette!) and let them rest for 10 minutes.

5
Done

Stretch every single dough ball with your hands and give them the classic pizzetta shape and put them in a tray (put some distance between them). Don't stretch it too much, we don't want the dough to be thin!

6
Done

Let the pizzetta rest for at least 2 hours in a warm place away from any cold air flow - in this time they should reach double their original size.

7
Done

Preheat the oven to 200 Celsius degrees. Meanwhile start cutting the mozzarella in slices (or cubes if you prefer!) and put the tomato passata in a bow. You can add some salt and sugar to the sauce, adjust it to your taste!

8
Done

Add 1 or 2 tablespoon of passata on top of your pizzette and put them in the oven for 8 minutes.

9
Done

After 8 minutes, take the pizzette out of the oven and add the mozzarella - cook for an additional 2 to 4 minutes.

10
Done

Now the pizzette are ready, you can add some oregano and olive oil on top - serve them while hot, or eat them the day after, they're going to be amazing!
