Wash the fennel well, removing the tougher outer part. Slice the heart of fennel, but keep aside the beard that will be used to decorate the dish.

Peel the oranges, skin them externally and cut them into thin slices. (You can collect the juice and add it to the final dressing). Peel the onion and cut it into thin slices.

Add all your ingredients to a lovely dish and season with oil (with orange juice if necessary), salt and finish with a sprinkling of freshly grated black pepper.

I use this salad often. Most people have neither seen it before nor tasted it. It is always a knock out visually and flavorfully.
