The Pantesca Salad, or Insalata Pantesca, is made with potatoes, tomatoes, olives, capers, onions and oregano. Simple ingredients, with nothing special in appearance. And yet, by putting them together, you get a dish with a deep, Mediterranean and inebriating aroma – provided that excellent, seasonal products are used!
The Pantesca salad obviously comes from Pantelleria, a windy island surrounded by rocks and sea, where the cuisine is as simple as everyday life. This simple salad has become one of the symbols of Sicilian gastronomy and it contains all the goodness of Sicily. A few suggestions: use at least two types of tomatoes, because it changes not only the shape but also the taste. Datterini and pachino, camone and piccadilly, San Marzano and perini!
“Pantesca” Salad

Red Onion 1
Green Olives 1/4 cup
Potatoes 120gr
Medium red heriloom tomatoes 6
Capper 1tbsp
Vinegar 1tbsp
Oregano 1tbsp
Salt 1/4 tbsp
Black Pepper 1/4 tbsp
Extra Virgin Olive Oil 1/4 cup
Directions
- Cook the potatoes in salted boiling water until tender.
- Cut the Onion in thin slices.
- Cut the tomatoes in small cubes.
- When the potatoes are cooked allow them to cool to room temperature, then peel and cut them into 4 pieces.
- Into a bowl move the Potatoes, Onions, Olives (Pitted!), Capers and Tomatoes.
- In another bowl, mix the vinegar with salt, pepper and oregano and slowly mix with the olive oil.
- Pour the mix into the Salad, and you’re ready to go!
