Directions
The pizza itself is not a Sicilian dish, but the way that the Sicilian bakeries are making the dough and putting the topping is unique and very different in comparison to other parts of Italy and of course the rest of the world.
This type of pizza, usually called “Pizza del fornaio” or “Pizza del panificio”, is sold by the slice and the price is usually of a single Euro ( 1.20$ ): portions are big (pure Sicilian way) and the price is super cheap, plus bakeries in Sicily are usually family owned, so the quality of the products is amazing. The most common toppings are Margherita (just Tomato and Mozzarella) or “Pizza con il wrustel” (Pizza with sliced hot dog – yes, that’s a thing and is DELICIOUS!)

Sift the flour and put it on your work surface. Try to give it the shape of a little mountain and make a well in the centre! |

Mix the water (it needs to be slightly warm) with the yeast and a teaspoon of sugar. When the yeast is perfectly dissolved, pour the mix on top of the flour mountain. |

Start mixing the mixture, adding a little of olive oil, salt and if needed a bit more water. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. The mixture needs to be slightly sticky, fluffy and homogeneous. |

Put the dough in a well-oiled bowl and with a knife make a cross on top of the dough. Cover with plastic wrap or a cloth and set aside in a warm, draught-free place to rise for 2 hours. |

When the dough is ready (after 2 hours resting it should have double the size!), put it on a well-oiled baking tray; do not stretch and flatten too much the dough, like you’ll do for a normal pizza – for the sicilian pizza the base is always thicker! |

Grate the mozzarella cheese (or cut it into very small dices) and the hot dogs in small pieces. |

Adjust the tomato sauce with a bit of olive oil, salt, sugar, pepper and oregano at your taste. I usually love it a bit on the sweet side! |

Cover the dough with the sauce that you prepared on point 7, and put it in a preheated oven at a temperature of 220° for 10 minutes. |

Take the pizza out of the oven and add on top the mozzarella and sliced hotdogs. Put some additional oregano if you like it! |

Now put the pizza again in the oven for an additional 10 minutes (15 if you like it crispy!). |
