The “Mangia & Bevi” (Literally Eat & Drink) better known in Palermo as “Arrusti and Mancia”, are super easy to prepare and very cheap! Among the most famous street food in Palermo, they can be enjoyed especially in the popular neighbourhoods near the street vendors who roast them in large grids often together with the equally famous Stigliole. There is no way to escape the temptation to taste them when you are hit by their appetizing scent that spreads across the street. The “Eat & Drink” is a staple in any of the outings of Palermo especially during Easter, whole families gather in the Park of the Favorita to roast and eat until dusk.

Ingredients

  • Spring onions 10

  • Bacon 20 slices

  • Salt

Directions

  • Roll 2 Slices of Bacon all around the spring onion until it is all covered and repeat until you’ve done it for all of your spring onions!
  • Cook them on your BBQ or alternatively on a grill. The final appearance will have to be a bit burnt.
  • Finally cut the onions into small pieces, put some salt and serve on a wooden cutting board as tradition dictates.
