Pasta with fried cucuzza

Pasta ca cucuzza fritta e menta (pasta with fried courgette and mint) is a typical Sicilian recipe, tasty and quick to prepare. It is a fresh, fragrant dish, perfect in its simplicity.

Ingredients

  • Pasta 220 gr

  • Zucchine 1

  • Garlic cloves 3

  • Mint leaf 5

  • EVO Oil

  • Salt

  • Pecorino Cheese (Grated)

Directions

  • Clean the cucuzza and cut it into round slices. Add salt and place them in a colander for 15 minutes so that they lose their vegetation liquid.
  • Crush the garlic cloves with the palm of your hand, peel them and place them in the frying pan where you have poured a generous amount of oil.
  • Fry the courgettes a little at a time and place them on a plate. Once done, turn off the heat and remove the garlic (or eventually remove it first if it burns!)
  • Cook the pasta in plenty of boiling salted water. Once done, drain it and remember to set aside a small amount of cooking water – this is super important!
  • Pour the pasta into the pan with the oil in which you have fried the courgettes, which you have heated up in the meantime. Stir-fry the pasta over low heat, add the cucuzza slice and the mint, which you have broken up with your hands, and mix. Remember to add a little cooking water to avoid the pasta to dry up too much.
  • Serve and, if you like, grate some pecorino onto the pasta! Another good choice could be Parmigiano of course or even ricotta salata!
