- To make Capers Pate it is necessary, first, to desalinate the capers by soaking them in water and changing it several times (two or three times at least).
- Once the capers have been desalted, we need to dry them and put them in a blender together with the oil and chili pepper.
At this point we blend everything until we get a creamy pesto and if necessary we can add more oil. - When finished, we fill the jars with the mixture and cover the same with a layer of oil: this will serve to make the pate last a long time once opened. It is advisable to store in the refrigerator.
