You can modify some of the ingredients of the basic recipe of this sicilian citrus pesto to obtain other delicious variations such as, for example, the addition of basil, capers or sun-dried tomatoes!
Our suggestion is to use this for fresh pasta or for risotto (maybe top it with some crushed pistachios on top!) or even with a bruschetta!
Sicilian Citrus Pesto

Oranges 4 (medium sized, preferably Sicilian!)
Lemon 1
Almonds 250gr (peeled)
EVO Oil 100ml
Capers 60gr
Directions
- Prepare all the ingredients by cutting the oranges and lemon coarsely, peel them and remove the seeds. If you want to smell the lemon a bit more you can add another lemon. Cut them in pieces and add them to the mixer.
- Add the almonds, oil and capers.
- Chop everything in the mixer, until it is not too fine, but slightly grainy!
- Your citrus pesto is ready to be eaten with your fresh pasta, risotto or a delicious bruschetta!
