The guys at Sicilian Food Culture and I are happy to share this very festive recipe, Anelletti al Forno, an absolute must for the holiday! This is the vegan version, but check out the full standard recipe here!

 

Ingredients:
– 700gr of Anelletti pasta
– Two bottles of tomato passata
– Onions and carrots for the soffritto
– 500gr of soy mince
– 2 eggplants (air fried)
– Violife mozzarella cheese
– Violife parmesan cheese
